BBQ Chicken Salad
This salad is a quick and easy recipe for supper on these hot days. Grab some fresh lettuce and tomatoes.
It only takes about 15 minutes to make and it’s something my whole family will eat. This best part of the salad is the dressing. It is a ranch dressing with a bit of a sweet tang to it from your favorite BBQ sauce. Enjoy!
BBQ Chicken Salad
6 Cups of chopped romaine lettuce
1 roma tomato
3/4 Cup of canned black beans, drained and rinsed
3/4 Cup of corn fresh or canned
1 Cup of montery jack cheese
Grill and BBQ 2 thin chicken breast (boneless, skinless)
1. Grill and BBQ your chicken breast
2. In a bowl combine your chopped lettuce, tomato, corn, black beans, cheese, and cooled chicken.
3. Mix BBQ sauce and ranch dressing
4. Drizzle and toss dressing into salad
I actually can’t believe I am sitting here blogging. I always loved being a mom and taking care of my family but was looking for a creative outlet to fulfill my hearts desires. I started my own business a few weeks ago which allows me help others design and decorate their own spaces or stage their home to sell. Its called Belgian Way Staging and Design(belgianway.com) I have been stretched and am learning a lot. I am writing about this to encourage anyone who wants to do something they love but are not sure if they would be able to and are scared or nervous. I was all of that, it took me years to get the courage to do this believe me I didn’t do this overnight. I had a lot of encouragement from my husband, family and friends. We always encourage our kids to work hard and that the possibilities are endless. I believe we as adults need to take our own advice. We may fall but get back up and learn from it and keep going. I do not know what God has planned for me but I take one step at a time with Him and know that I’m right where I am supposed to be.
I hope this was an encouragement to you to follow what you loved to do and do it with passion! You never know whose lives you are touching!
Spring has sprung and hopefully the weather in the northeast is going to take a turn and get sunny. This had me thinking about something I believe is becoming more popular over the years. Succulents! I love them! They are super easy to care for. So if you do not have a green thumb your should still be able to have these in your planters this year. I have 2 tricks to keeping your succulents alive!
Loose, fast-draining soil!
This soil works well from Home Depot or you could most likely get it where they sell Miracle grow potting soils. Call to check before you make the trip though.
Don’t hardly water them! I mean that just when you think you should water them wait a few days or even a week and then water them. They do not need to be watered often.
